Pão De Quejio

Pão de queijo is the cheese puff of Brazil! These cheese breads are popular across Brazil, similar to how hops bread is in Trinidad & Tobago. Found at almost every bakery, this bread is traditionally made with tapioca flour, butter and cheese. These little bites are perfect with coffee or tea and ideal for breakfast or a quick snack. This bread can be prepared ahead of time and frozen until ready to bake.

Pão De Quejio



Ingredients

  • 1/2 cup full cream milk
  • 2 tbsp butter
  • 2 tbsp oil
  • ¾ cup Tapioca Flour
  • ¼ cup Cassava Flour
  • 1 Egg, slightly beaten
  • ¼ tsp salt
  • ¾ cup Cheese, shredded

Method

  1. Preheat oven to 400 degrees Fahrenheit
  2. Warm milk in pot with oil and butter
  3. Once butter is melted, remove pot from stove top and add flour (Tapioca and Cassava)
  4. Add salt to beaten egg then incorporate into flour mixture
  5. Fold in cheese
  6. Using a spoon, or scoop, to portion dough and roll into golf ball size pieces
  7. Place on lined baking sheet and bake for 12-15 minutes
  8. Allow to cool for 5 minutes once removed from the oven

*these cheese breads can be frozen after portioned and baked fresh when ready!
*try a combination of mozzarella cheese and parmesan cheese for a cheesier version!
