One In The Oven
1 Ripe Breadfruit
3 tbsp Butter
1 tbsp Paprika
4 leaves Chadon Beni
1 cup Mayonnaise
2 tsp Lime Juice
Salt and Black Pepper (to taste )
3 cups Oil (for frying )
Heat oil at a medium to low rate.
Clean the breadfruit thoroughly and slice thinly.Note:( see video on how to clean as well slice the breadfruit )
Place the slices into the hot oil and fry for 4-6 minutes making sure all the chips are golden brown in colour and evenly fried.
Place the fried chips onto tissue to absorb the excess oil.
To make the paprika butter. Simply melt the butter, add the paprika, salt,black pepper and the dry parsley.
Cook the paprika butter for about one minute and take it off the fire.
To make the citrus chadon beni mayonnaise. To the mayonnaise add the chadon beni, salt, black pepper and lime juice.
Whisk thoroughly making sure everything has been combined.
Serve the two dipping sauces with fried breadfruit chips and enjoy.
