Curry Mustard with Cassava Fries

Cassava Fries with Curry Mustard

Cassava Fries Ingredients

  • 2 lbs cassava, peeled and cut into 3″ pieces
  • 10 cups of water
  • 2 cups of vegetable oil
  • 2 tbsp paprika
  • 1 tbsp rosemary
  • 1 tbsp dried thyme
  • 1 tbsp black pepper
  • 2 tsp salt

Method:

  1. Bring water to a rolling boil in a pot
  2. Add a pinch of salt to water then add cassava, boil for 8 minutes
  3. Drain boiled cassava
  4. Heat oil in a frying pan or wok
  5. Fry cassava until golden brown
  6. Mix dried herbs and spices together
  7. Toss cassava in spice blend while still hot

Curry Mustard Ingredients

  • 1 cup Swiss Mayonnaise
  • 2 tbsp Swiss Mustard
  • 2 tbsp curry powder
  • 2 tbsp honey or agave (or 2 tbsp sugar)

Method:

  1. Combine ingredients in a bowl
  2. Mix thoroughly
  3. Serve with cassava fries
