Oats & Flaxseed Bread

This was a successful baking experiment using my spice grinder to manipulate ingredients from my pantry. This Oats & Flaxseed Bread uses old fashioned oats and golden flaxseed to give this loaf some added nutrients, flavor and texture.


Oats & Flaxseed Bread

Ingredients

  • 1/2 cup old fashioned oats
  • 1/2 cup golden flaxseed
  • 2 1/2 cups all purpose flour
  • 1 tsp salt
  • 1 tbsp sugar
  • 1 tbsp yeast
  • 1 cup warm water
  • 1/3 cup olive oil

Method

  1. Use spice grinder to grind oats and flaxseed into a powder
  2. Combine dry ingredients, mix thoroughly
  3. Add water and oil then mix in bowl until a ball of dough is formed
  4. Turn dough out on to a floured surface then knead for 8 to 10 minutes
  5. Cover dough with a damp kitchen towel and allow to prove for 45 minutes to 1 hour or until doubled in size
  6. Punch air out of dough then flatten into a rectangular shape approx 1/2 inch thick
  7. Tuck and roll dough unto itself
  8. Place into a greased baking pan
  9. Brush dough with water and apply whole oats and flaxseed to the top
  10. Cover with a damp kitchen towel and allow to prove for 30 minutes
  11. Bake in a preheated oven at 350 degrees for 25 minutes
  12. All bread to cool before enjoying
