Gourmet Style Pizza

If you’re reading this around the time it was posted then it’s lockdown in Trinidad & Tobago which means restaurants and food service have been suspended for a couple weeks and you can’t purchase your favorite gourmet style pizza. This gourmet style pizza recipe isn’t a far cry from the pizza recipe from back in the Goodfellas days. Goodfellas was a pizza business we ran in the 90s from my mother’s kitchen. This is where my pizza making journey began and I’ve been tweaking and experimenting with pizza recipes ever since. Shout out to the Goodfellas, Akil, Anthony and Makesi. RIP Marlon “Yogi” Yearwood.

A good pizza recipe relies on two key components, the dough and the sauce. This gourmet style pizza recipe pays special attention to both components to deliver a relatively easy and delicious pizza that’s sure to impress.

Gourmet Style Pizza




Dough Ingredients

  • 1 1/2 cups all purpose flour
  • 1 1/2 cups double zero flour (if you can’t get 00 flour then use 3 cups AP flour)
  • 2 tsp yeast
  • 1 tsp sugar
  • 1 tsp salt
  • 1 cup tepid water

Dough Directions

  1. Add sugar and yeast to water then stir and set aside for 5 minutes
  2. Combine flour and salt thoroughly
  3. Mix dry and wet ingredients together and combine until a ball of dough is formed
  4. Transfer dough on to a work surface and knead for 8 to 10 minutes
  5. Place dough in a bowl then cover with a damp towel and allow to proof for 45 minutes to 1 hour or until doubled in size

Sauce Ingredients

  • 1 large onion finely chopped
  • 12 cloves garlic minced
  • 3 tbsp dried basil
  • 375 ml tomato paste
  • 375 ml water
  • 2 tbsp oil
  • salt & black pepper to taste

Sauce Directions

  1. Add oil to a pot then sauté onions for 2 minutes over medium heat
  2. Add garlic then sauté for 1 minute
  3. Add tomato paste, water and dried basil. Season with salt and black pepper then combine well
  4. Cover then allow to cook for at least 20 minutes

Gourmet Style Pizza Assembly

  1. Break off a portion of the dough, roughly the size of a tennis ball
  2. Roll into a ball with your hands then place on a floured surface
  3. Roll out dough to your preferred size and thickness
  4. Place pizza dough on a hot tawah or frying pan and cook for approximately 90 seconds
  5. Flip pizza dough over then cook top side for 20 seconds
  6. Transfer to a baking sheet then apply 2 to 3 tbsp of pizza sauce
  7. Top with your preferred cheese and toppings (drizzle olive oil and season veggie toppings with a pinch of salt and black pepper to taste)
  8. Place baking tray under broiler at maximum heat for 5 to 6 minutes max. (Keep an eye on it or it will burn)
  9. Remove from oven and allow to cool before enjoying.
