This idea for Coconut Bake Bagels with Cream Cheese & Smoke Herring came to me while I was first testing a bagel recipe. I decided to take it even further by doing a local twist to Bagel & Lox by doing a Smoke Herring & Cream Cheese Filling.
Using bread/bakers flour gave the bagels a really lovely, chewy interior while boiling them in the “bagel bath” provided a shiny and crispy exterior. The smoke herring gives lovely smokey flavor the filling along with the slight tanginess of the cream cheese, acidity from the tomatoes and a fresh pop from local celery! #bagels #smokeherring #baking #recipe
Coconut Bake Bagels with Cream Cheese & Smoke Herring

Ingredients
Coconut Bake Bagels
- 480 g Bakers Flour 3 ¾ cups
- 10 g Salt 1 ¾ tsp
- 10 g Honey 1 ½ tsp
- ⅛ tsp grated nutmeg
- 9 g yeast 2 tsp
- 275 g coconut milk 1 ⅛ cups
- 50 g shredded coconut ⅔ cups
- 1 tbsp honey for bagel bath
- 8 cups water for bagel bath
- 2 cups shredded coconut for topping bagels
- 1 egg beaten for egg wash for topping bagels (optional)
Cream Cheese & Smoke Herring Filling
- 170 g smoke herring
- 250 g cream cheese
- 3 pimentos finely chopped
- 4 cloves garlic minced
- 1 bundle celery finely chopped (separate leaves and stalks)
- 3 tomatoes diced
- 2 onions diced
Instructions
Coconut Bake Bagels
- Add flour, yeast, salt and nutmeg to a large bowl then combine well.
- Add grated coconut then combine well.
- Add coconut milk and honey then combine wet and dry ingredients.
- Bring mixture together into a ball of dough then cover and allow to rest for 30 minutes.
- Wet hands then perform 4-5 stretch and folds to dough. Form a smooth ball of dough then cover and allow to rest for 45 minutes to 1 hour.
- Portion dough into 8 equal pieces.
- Cover portioned dough balls and allow to rest for 15 to 20 minutes,
- Use thumb to punch a hole in the dough then use thumb and index finger to widen hole. Spin the dough gently to stretch into final shape. (see video for example)
- Bring water and honey mixture to a boil in a large pot.
- Cook bagels for 1 minute on each side.
- Remove from water then dip in shredded coconut immediately if not using egg wash.
- Place on a rack until all bagels are boiled.
- If using egg wash, allow bagels to cool before applying egg wash then dip in shredded coconut.
- Preheat oven to 400 degrees then bake bagels in a tray lined with parchment paper for 20 to 25 minutes.
- Place on a rack and allow to cool for at least 10 minutes before enjoying.
Cream Cheese & Smoke Herring
- Boil smoke herring for 5 minutes to remove excess salt.
- Drain and rinse smoke herring in room temperature water.
- Shred smoke herring into flakes, removing as much bones as possible.
- Heat up oil in a pan then add onions, garlic, pimento, celery stalks and tomatoes.
- Allow mixture to cool before adding cream cheese and chopped celery leaves.
- Combine well.
