BBQ Fried Chicken Sandwich

If you’ve been following Mmhmm on the EAF channel you would know that I take the art of sandwich making very seriously. This Katsu Style BBQ Fried Chicken Sandwich is no exception. We’re doing the most to achieve an awesome sandwich and its all made possible through a collaboration with Swiss products. For this sandwich i’m using the Swiss Original Barbecue Sauce to create our BBQ Fried Chicken and adding a creamy coleslaw using Swiss Mayonnaise and Swiss Mustard.


Katsu Style BBQ Fried Chicken Sandwich

Ingredients:

    • 2 tbsp paprika
    • 2 tbsp cayenne pepper
    • 2 tbsp ginger powder
    • 2 tbsp coriander powder
    • 2 tbsp dried thyme
    • 2 tbsp black pepper
    • 2 tbsp white pepper
    • 2 tbsp onion powder
    • 2 tbsp garlic powder
    • 1 tsp salt
    • 1 tbsp lemon pepper
    • 1 tbsp sugar
    • 2 tbsp red wine vinegar
    • 1/2 head of a medium sized cabbage shredded & blanched
    • 1 carrot grated
    • 1 bundle of parsley finely chopped
    • 1 cucumber thinly sliced
    • 1 tomato sliced
    • 3 chicken breasts
    • 8 burger buns
    • 2 cups cornstarch
  • 1 egg beaten
  • 3/4 cup Swiss Mayonnaise
  • 2 tbsp Swiss Mustard
  • 1 1/2 cups Swiss Original Barbecue Sauce
  • 2 cups vegetable oil

Spice Blend Method:

  1. Add paprika, cayenne pepper, ginger powder, garlic powder, onion powder, white pepper, black pepper, coriander powder, dried thyme and salt to a bowl then combine well.

BBQ Fried Chicken Method:

  1. In a large bowl add chicken breasts and generously sprinkle with spice blend
  2. Use hands to massage chicken then allow to marinate for 30 minutes
  3. Add egg mixture to chicken
  4. Mix remaining spice blend to cornstarch
  5. Dredge chicken breasts in cornstarch
  6. Fry in oil for 6 to 8 minutes
  7. Add Swiss Original Barbecue Sauce to a bowl then toss fried chicken pieces
  8. Place on a rack then place under a broiler at 400 degrees for 3-4 minutes in electric oven or 1-2 minutes in a gas oven
  9. Flip chicken and repeat step 8

Coleslaw Method:

  1. In a large bowl combine cabbage, carrots, parsley, lemon pepper, sugar, Swiss Mayonnaise and Swiss Mustard
  2. Mix thoroughly

Pickled Cucumbers Method:

  1. Add sliced cucumber to a bowl with red wine vinegar
  2. Toss and allow to sit for at least 5 minutes

Sandwich Construction:

  1. Add a layer of coleslaw to buns
  2. Add chicken
  3. Add cucumbers
  4. Top with sliced tomatoes
  5. Serve & Enjoy!
