Veggie Bites Christmas Platter

How To Prepare Veggie Bites

In a wok or pot, heat up oil to deep fry one pack of prepared AD-Yana Foods’ Veggie Bites (10 Bites) then fry veggie bites until golden brown. This should take approximately 5 to 6 minutes.

Roasted Vegetables Ingredients

  • ½ cup carrots, chopped in chunks
  • ½ cup mushrooms, chopped in chunks
  • ½ cup sweet pepper, chopped in chunks
  • ½ cup melongene/bhaigan, chopped in chunks
  • ¼ cup coconut oil (enough oil to coat the vegetables)
  • 2 tsps. Sumac
  • 2 tsps. Paprika
  • 2 tsps. Garlic powder
  • 1 tsp black pepper
  • 1 tsp fine thyme
  • ¼ tsp red pepper flakes
  • Salt to taste

Method

  1. Pre-heat oven to 400 degrees Fahrenheit.
  2. Add all the vegetables to a mixing boil. Drizzle oil onto vegetables; enough to cover the vegetables, and add the spices and salt to taste.
  3. Mix until all vegetables are thoroughly coated.
  4. Place unto a non-stick baking tray or covered baking tray.
  5. Place into the oven and roast for 20 mins or until edges are brown and roasted.

Hummus

  • 1 tin of Channa/Chickpeas or 280 grams cooked Channa
  • 4 Cloves garlic, roasted
  • 1 large pimento
  • ½ cup tahini paste
  • ½ cup olive oil
  • 3 tbps. Lemon juice
  • ¼ tsp red pepper flakes
  • Dash of cumin
  • Dash of paprika
  • Salt to taste

Method

  1. Drain and wash channa/chickpeas.
  2. Place all hummus ingredients; including drained channa/chickpeas and roasted garlic, into a blender and blend until smooth/creamy.
  3. Taste for salt.

Sorrel Drizzle Ingredients

  • 1 cup of your homemade sorrel, already sweetened…sweet
  • 2 clove sticks
  • 1 cinnamon stick
  • 1 bayleaf

Method

  1. Add all drizzle ingredients into a sauce pan and let reduce to half the quantity, about 15 mins at medium/high temperature.

Veggie Bites Christmas Platter Assembly

  1. Spread hummus on the base of a plate/serving tray.
  2. Arrange the veggie bites and roasted vegetables on the hummus spread.
  3. Drizzle with the sorrel sauce and top with the toasted almonds and chive.
  4. Serve warm and enjoy!
