These chicken and veggie skewers are the perfect “cutters” for your backyard jam. This is a simple meal that can be easily adapted to suit to create the perfect combo for any get together. Chicken & Veggie Skewers
Ingredients (Chicken Skewers)
- 3 lbs chicken breast cut into bite sized chunks
- 1/4 cup plain yogurt
- 6 tbsp skewer spice blend
Method
- Mix chicken together with yogurt and spice blend
- Cover then place in the refrigerator and marinate overnight
- Add chicken pieces to skewers then cook for 15 minutes in a skillet or grill. You can also roast in a preheated oven at 350 degrees for 30 minutes
Ingredients (Veggie Skewers)
- 1 large eggplant cubed
- 2 zucchini cubed
- 2 sweet peppers cut into 1″ pieces
- 8 pimentos cut into 1″ pieces
- 3 purple onions quartered
- 8 tomatoes quarteredÂ
- 4 tbsp skewer spice blend
- 4 tbsp vegetable oil
Method
- Rub veggies with vegetable oil and skewer spice blend
- Assemble on skewers
- Cook on a grill or skillet for 10 minutes or roast in a preheated oven at 400 degrees for 20 minutes
Skewer Spice Rub
- 2 tbsp coriander seeds
- 2 tbsp whole geera
- 3 tbsp paprika
- 2 tbsp onion powder
- 2 tbsp garlic powder
- salt & black pepper to taste
Method
- Toast coriander seeds & whole geera in a pan until fragrant
- Transfer to a mortar and pestle or spice grinder then grind to a powder
- Combine well with other spices
