Easy Oven Barbecue Chicken and Macaroni Salad

If you have ever been intimidated by cooking an entire meal for your family, this Easy Oven Barbecue Chicken and Macaroni Salad is the perfect place to start. Barbecue Sauce
- 1 cup of Tomato Paste
- 3 tablespoons Granulated Sugar
- 1 tablespoon of paprika
- 3 tbsp of dried thyme leaves
- 1 tablespoon of onion powder
- 1 tablespoon of garlic powder
- 1 tablespoon of soy sauce
- 1 teaspoon of black pepper
- 1 tablespoon of Waitrose Extra Virgin Olive Oil
Method
- Heat tomato sauce on a medium saucepan
- Add remaining ingredients and stir.
- Set aside and allow to cool.
Barbecue Chicken
- 1 whole chicken, seasoned* & cut into parts
- Barbecue Sauce (recipe above)
- 2 tablespoons of Waitrose Extra Virgin Olive Oil
Method
- Preheat oven to 375F.
- Toss chicken in Waitrose Extra Virgin Olive Oil
- Place chicken on a wire rack and bake for 20 minutes.
- After the first 20 minutes, flip each piece over.
- Baste the chicken with the barbecue sauce.
- Broil for 2 minutes.
Macaroni Salad
- 1 package of Cuisine Elbow Macaroni
- 1 tin of Cuisine Peas and Carrots
- 1 tin of Cuisine Whole Kernel Corn
- 2 cloves of garlic, minced
- 3 teaspoons of granulated sugar
- 1/3 cup of mayonnaise
- 1 tablespoon of mustard
Method
- Boil macaroni in a large pot of water until soft.
- Once the macaroni is boiled, drain the pasta and run the macaroni under cold water and allow to cool.
- Transfer the cooled macaroni to a large bowl.
- Toss in remaining ingredients.
- Serve cold.
*Chicken Seasoning
- 1 pimento pepper
- 1 onion, peeled
- 2 cloves of garlic
- 5 stalks of chive
- 3 stalks of parsley
- 1 tsp of soy sauce
- 1 tsp of lime juice
Method
- Place ingredients in a food processor or blender.
- Pulse until smooth.
