Across the world Coronavirus has caused many restaurants to rethink their dining experience and Trinidad & Tobago is no exception. Aioli was ready for the grab and go era with Aioli Marketplace which was launched back in 2017. Three years later Chef John Aboud is expanding the Marketplace experience with Aioli Up Market.
The Space
Upon entering it’s clear that Aioli Up Market is not trying to be a restaurant. The space is not big yet I would not describe it as intimate. Aioli Up Market is teeming with activity and has a buzz even before formally opening their doors. The glass panes create an almost invisible barrier between staff and patrons, which means social distancing protocols are observed yet you never feel like you are far away from the action. Whether it’s breads going into the oven, chickens roasting, handmade pizzas being rolled out or sushi rolls being crafted, there is always something happening to pique your interest.

Aioli Up Market – Pizza Menu
The Aioli Pizza menu is filled with great combinations to satisfy any pizza craving. Forgot to ask if there was a BYOP option.
Pizzas are made fresh, by hand, using the best ingredients.
My personal favorite was the Eggplant Pizza – Rosso Sauce, Mozzarella, Eggplant, Roasted Garlic, Parmigiano, Basil, Speck, Fire Roasted Pepper, Black Olives
A crowd favorite, The Italian Duck Sausage – Rosso Sauce, Mozzarella, Pecorino Romano, Duck Sausage, Shaved Fennel, Mandarin Orange, Dill, Villa Balsamic
For the seafood lovers, Frutti Di Mare – Tomato Basil Sauce, Shrimp, Scallop, Crab, Basil, Lemon, Parmigiano Reggiano, Onions, Mushrooms, Peppers

Aside from the fact that there were no mundane rolls on the menu, I took special notice of the names. With menu items like the “Sho-Ryu-Ken, Ninja Gaiden and Altered Beets” it was clear that Chef John is a gamer. So before we get into the sushi, lets take a moment to appreciate Chef John’s jacket.
