Sweet Potato Spanish Omelette

Valentine’s day will be soon upon us and by us I really mean allyuh because celebrating valentine’s day has never been my thing. Probably when I was a teenager but not as an adult. But getting back to speaking about the day itself, we don’t all have the disposable income to treat our significant other to a candlelight dinner in a fancy restaurant or even a date night and the movies. Some of you will have to get creative and make do with what you have to let a few extra sparks fly on this day. If your husband your wife or boyfriend or girlfriend or the people man or the people woman like breakfast in bed kinda vibes then this sweet potato Spanish omelette is simple dish that could score some points.

Traditionally the Spanish omelette is made with Irish potato but I didn’t have any. I literally used what I had in the kitchen to come up with this recipe.

Ingredients:

  • 1 Sweet Potato sliced thinly
  • 1 Medium sized Onion sliced
  • 1 Clove of Garlic
  • 4 Eggs
  • 4 Tbsp Olive Oil
  • 1 Pinch of Whole Geera or Cumin
  • 2 Tbsp Butter
  • Salt & Black Pepper (To taste)

Method:

  1. I Had to get the most out of this one clove of garlic so instead of chopping or mincing, use a bit of salt, the flat edge of your knife and turn it into a garlic paste. You will be able to extract the most flavor out of the garlic using this method.
  2. To a frying pan add about 4 tablespoons of olive oil
  3. Toast a sprinkling of whole geera in the oil
  4. Add your sweet potatoes and cook until tender
  5. As sweet potatoes begin to go tender, add onion and garlic. Cook on low heat until onions are caramelized
  6. Add 4 eggs to a bowl
  7. Add sweet potato mixture
  8. Season with salt and pepper and allow to sit for at least 5 minutes
  9. Add 2 tablespoons of butter to your frying pan
  10. Add the egg mixture to the pan and cook for about 3 to 5 minutes or until the edges start to go brown and bubble.
  11. Use a plate and cover the frying pan, flip the omelette in onto the plate then slide it back into the frying pan for the other side to cook for about 2 -3 minutes.
  12. Serve and enjoy!

This isn’t a fine steak or lobster but it is delicious and it uses what you have to create something special for that special someone. Happy Valentine’s Day.
