Cassava is definitely one of my favorite ground provisions, this is a fairly quick and easy way to whip up an excellent vegan side dish to go with your favorite legume or meat.
Ingredients:
- 2lbs cassava
- 2 cloves of garlic (minced)
- 1 large onion (julienne)
- 3 pimentos (julienne)
- 1 sweet pepper (julienne)
- 1 cup carrots (julienne)
- 3 sprigs of fine thyme
- salt & black pepper (to taste)
Method:
- Peel cassava, cut into 2 inch pieces
- Boil in salted water for 15 minutes or until tender but firm
- Saute onion, garlic, pimento, sweet pepper and carrots on medium heat for 1 minute
- Toss with cooked cassava
- Season with salt and black pepper to taste
- Add fresh thyme
