Roti Pizza

This is more of a meal idea than a recipe since there is no hard and fast way to do this nor are there any measurements or steps to follow. Believe it or not, I don’t always have time to cook a full meal so I’m always in the market for a quick fix or as I like to call it a “raid de fridge” special, so I always pick up a pack of dhalpurie in the grocery which comes in very handy for quick fix meals and snacks. For this rotipizza I’m using little odds and ends I had in the fridge to bring it all together.

I topped my dhalpurie with a layer of tomato paste then added fresh tomatoes, grated cheese, onions and sweet pepper. Bake in a preheated oven at 400 degrees for 10 minutes or until the cheese has melted.

You could also fold it in half and bake it for a roti calzone 🙂

This is a quick and delicious snack to whip up when liming with friends. Its all about raiding your fridge and using what’s available so feel free to add any topping you like. Just don’t use ketchup!
