This was supposed to be my very first dessert recipe on MmHmm but I decided to create something versatile that can be used in different dessert inspired applications. This passion fruit butter which is actually very similar to a custard is definitely something you need to try.
Ingredients:
- 1/2 cup passion fruit pulp or juice
- 1/2 cup granulated sugar
- 4 large eggs
- 1 cup of butter
- 2 bay leaves
- 5 cloves
- 2 tbsp lemon juice
Method:
- Grind granulated sugar until powdery using a coffee grinder, food processor or blender.
- Lightly beat 4 eggs, combine with passion fruit juice and set aside
- In a pot bring some water to a boil then reduce to medium heat and place a bowl over the pot. Ensure the bowl is not touching the water.
- Add your butter and sugar, stir until it begins to melt
- Add bay leaves, cloves, egg and passion fruit mixture and lemon juice
- Keep stirring with a wooden spoon until it thickens. This should take about 10 minutes or until the mixture is coating the spoon.
- Allow to cool to room temperature
- Enjoy right away or store in a sterilized container (keep refrigerated)
