Gluten Free Oatmeal Cookies

A friend of mine recently inspired me to try gluten free recipes and while I had the option of purchasing gluten free flour or flour substitutes in the grocery, I wanted to experiment a bit with the stuff I had in my pantry. I got the idea to try these Gluten Free, Vegan Oatmeal Cookies after doing my oats and flax seed bread video. I thought, if I could make bread with that mixture I could probably use it for cookies as well. So I decided to take this recipe that you can find at the back of the cover for the Quaker Oats container and tweak it to make it gluten free and vegan. I mean, if we if we going hipster, is best we go all the way.


Gluten Free Oatmeal Cookies

Ingredients:

  • 1 cup flax seed flour
  • 1 cup oat flour
  • 2 1/2 cups old fashioned oats
  • 1 tsp baking soda
  • 1 tsp cardamom
  • 1 tsp grated tonkabean
  • 1/2 tsp salt (optional)
  • 3/4 cup brown sugar
  • 1 cup raisins
  • 1 tsp vanilla essence
  • 1/2 cup olive oil
  • 1/3 cup hot water (for raisins)
  • 4 tsp water (for flax egg)

Method:

  1. Add hot water to raisins then set aside
  2. Add 2 tsp flax flour to 4 tsp water, mix into a paste then set aside
  3. Mix dry ingredients, combine well
  4. Add raisins, olive oil and vanilla essence to mixture and combine well until cookie dough is formed
  5. Use an 1/8th of a cup or ice cream scoop to form cookies
  6. Place on a baking tray lined with parchment paper or a silicon baking mat
  7. Bake in a preheated oven at 350 degrees for 9 minutes
  8. Place cookies on a rack and allow to cool
  9. Enjoy
