A friend of mine recently inspired me to try gluten free recipes and while I had the option of purchasing gluten free flour or flour substitutes in the grocery, I wanted to experiment a bit with the stuff I had in my pantry. I got the idea to try these Gluten Free, Vegan Oatmeal Cookies after doing my oats and flax seed bread video. I thought, if I could make bread with that mixture I could probably use it for cookies as well. So I decided to take this recipe that you can find at the back of the cover for the Quaker Oats container and tweak it to make it gluten free and vegan. I mean, if we if we going hipster, is best we go all the way.
Gluten Free Oatmeal Cookies
Ingredients:
- 1 cup flax seed flour
- 1 cup oat flour
- 2 1/2 cups old fashioned oats
- 1 tsp baking soda
- 1 tsp cardamom
- 1 tsp grated tonkabean
- 1/2 tsp salt (optional)
- 3/4 cup brown sugar
- 1 cup raisins
- 1 tsp vanilla essence
- 1/2 cup olive oil
- 1/3 cup hot water (for raisins)
- 4 tsp water (for flax egg)
Method:
- Add hot water to raisins then set aside
- Add 2 tsp flax flour to 4 tsp water, mix into a paste then set aside
- Mix dry ingredients, combine well
- Add raisins, olive oil and vanilla essence to mixture and combine well until cookie dough is formed
- Use an 1/8th of a cup or ice cream scoop to form cookies
- Place on a baking tray lined with parchment paper or a silicon baking mat
- Bake in a preheated oven at 350 degrees for 9 minutes
- Place cookies on a rack and allow to cool
- Enjoy
