Five Fingers also known as Star Fruit and Carambola is a popular local fruit that we seldom use in our cuisine. This Asian inspired Five Finger Lickin Chicken is a must try! The recipe features five fingers in a savory application as opposed to a dessert, jam or beverage which are more common uses of the fruit.
Across the globe In Indonesia, Malaysia, Philippines, Vietnam and other parts of Southeast Asia where it is native, most people know it as Star fruit, and fairly obviously, because of its star shape when sliced. Five Finger Lickin Chicken
Ingredients
- 1 whole chicken pre-seasoned and cut into parts
- 2 cups five finger juice
- 1 five finger sliced
- 1 large onion diced
- 6 cloves garlic minced
- 3 tbsp minced ginger
- 2 tbsp minced arrowroot (optional)
- 1 scotch bonnet pepper (optional)
- 2 star anise
- 2 bay leaves
- 1 bundle chives stems chopped finely
- 1 bundle chives leaves cut into 2″ pieces
- ‘1 tsp MSG
- 4 tbsp oil
- salt & black pepper to taste
Method
- Add oil to a cast iron skillet or pot on medium/ high heat then add chicken
- Sear chicken on both sides for one minute per side, season with salt & black pepper to taste
- Remove chicken from pot then add aromatics, sauté for 2 minutes
- Deglaze pan with five finger juice
- Add star anise, MSG, bay leaves, scotch bonnet pepper and half of the chopped chives
- Season with salt and black pepper to taste
- Bring mixture to a boil then return chicken to pot
- Add sliced five fingers
- Place cast iron skillet in a preheated oven at 400 degrees for 20 – 25 minutes
- Garnish with fresh chives
- Serve & Enjoy
