Sometimes you get a breadfruit with every intention of cooking it on the same day or the day after but things go awry and you end up with an overripe one on your hands. This recipe is a great way to salvage that overripe breadfruit.
Breadfruit Fritters
Ingredients
- 3 cups breadfruit pulp
- 2 large eggs
- 1 medium onion (finely chopped)
- 3 cloves garlic (finely chopped)
- 2 pimento peppers (finely chopped)
- 1/2 scotch bonnet pepper (finely chopped)
- 3 shadon beni leaves (finely chopped)
- salt & black pepper (to taste)
- 4 tbsp oil (for frying)
Method
- Saute onion, garlic, pimento and scotch bonnet pepper in a frying pan for 1 minute or until onions are translucent.
- Add aromatics, shadon beni, breadfruit and eggs to a bowl then combine well.
- Season with salt and pepper to taste.
- Add oil to a frying pan then, using a spoon, portion out batter into fritters and place two to three into the pan.
- Cook on low heat for 3 to 4 minutes per side
- Serve and enjoy!
