This is the perfect recipe to whip up when you have no time to messing around in the kitchen but still need something warm and wholesome to consume. With five minute of prep time and ten minutes to cook this 15 minute veggie soup uses the most basic pantry items and transforms it into quick and easy comfort food. 15 Minute Veggie Soup Ingredients

  • 1 carrot diced
  • 1 potato cut into small cubes
  • 1 medium sized onion diced
  • 2 cloves of garlic minced
  • 2 pimentos finely chopped
  • 1 celery stalk finely chopped
  • 3 tbsp olive oil
  • 1 1/2 cups water hot water
  • salt and black pepper to taste

Veggie Soup Method

  1. Add oil to a pot on medium heat
  2. Add onion, garlic, carrot, potato, pimentos and celery, saute for 3 minutes
  3. Season with salt and black pepper to taste
  4. Add water and bring to a rolling boil
  5. Simmer for 8 to 10 minutes
  6. Finish with fresh celery
  7. Serve hot
  8. Enjoy
