Trinicooks is one of the few units we say yes to without much explanation of what we’re saying yes to. Firstly because they are yet to invite us to something that was a waste of time. But also because we enjoy hanging out with Joel and Mirella. They bring a wealth of knowledge to the table in a fun package, which is always a great combination when you find it.
So we went down to Di Lusso, to find out exactly what we were invited to. Nice place by the way. A home cafe kinda vibe where you can take a time out, grab a drink and a bite and even pick up a few things for your kitchen and your home.
A nice place for Tinicooks to launch another one of their incentives. The Trinicooks Artisanal Brunch Series. Over the period of six weeks, 6 chefs will be paired with 6 local products to create 6 unique brunch experiences to enjoy. It’s not only an event that plays into the growing popularity of the modern Sunday Brunch, but the products being used to create the menu will be available for purchase at the event too. So it’s also a channel that will generate sales for local producers.
Expect brands like Perfect Peppers and their range of innovative products.
Also brands like Nice n Spicy with their innovative take on preserving and bottling local favorites like Saltfish and Smoked Herring.
With food there is usually drink, so the good people at AMCO were at the launch giving us a sample of what the drink situation will be like at the events. Looks good from our view.
Expect some premium sips up in there.
As a teaser of what will come out of these cool pairings, we enjoyed a few bites. Like these Cheese Cups with Pepper Jelly.
Tried them with the Sorrel variety. Nice.
How about a warm Brie Tartlet with Apple Butter? Yes please to that creamy, smokey goodness.
This fresh fruit shot with a spicy vinaigrette was interesting. Nothing to write home about, but not bad.
The pickled beetroot however, was a beet lover’s ‘ah ha’ moment. Still not sure if I prefer it as cutters or at the side of a meal like a chunky slaw, but it’s a great way to have beetroot. Safe to say the incentive is going to spark some creativity.
Gluten free Pizza Bites with Marinara Sauce and a Parmesan Crisp demonstrated the versatility of the series from a food requirement perspective. There should be a menu to suit everyone.
Expect some remixes too, like these Saltfish and Smoked Herring Wantons. I vote team Smoked Herring.

The real show stopper though was this Banana Waffle Sundae by the chef being featured in the first brunch of the series, Moylan of Moy’s Gluten Free Kitchen. A real enjoyable treat even for a dessert skipper like myself. And nothing to hint that it was gluten free or anything other than downright delectable.
