Vegan Black Bean Burger

In the past I have made a lot of vegetarian dishes but I do believe this is the first for a vegan burger. Vanessa is a Youtuber and she makes strictly vegetarian / vegan-based recipes. I am always willing to learn so I thought this would have been a perfect time to brush up on my vegetarian side. The burger was so delicious. A moist inside and a crunchy exterior. All the additions elevated the burger and I was pleasantly surprised. I even showed her how to make an Avocado aioli. Super simple and tasty. It can be used on bread and even crix. Overall a great recipe took keep in your repertoire and change things up now and again. Thanks again Vanessa and I hope you all enjoy.

Ingredients

  • 2 tbsp Cuisine flaxseed
  • 6 tbsp water- (for flax seed)
  • 5 tbsp Cuisine Soya-bean oil
  • 10 Garlic cloves (finely diced save 5 for the aioli)
  • 3 Medium onions (1 finely diced, 2 sliced)
  • 1 medium Carrot (finely diced)
  • 1 medium Green pepper (finely diced)
  • 3 cans Cuisine Balck beans (drained)
  • ½ C Walnuts
  • ¾ C Oats
  • 1 Avocado (Medium diced)
  • 3 Tbsp Olive oil
  • 4 Burger buns
  • Salt- To taste
  • Black pepper – To taste

Method

  1. Preheat oven to 400 degrees.
  2. Heat 3 tbsp of Cuisine oil and add the sliced onions. Note ( Keep over a medium heat.)
  3. Season with salt and allow the onions to become soft, tender and caramelized. For about 15 minutes. Note (This process takes a while be patient and keep stirring for even cooking.)
  4. Grind flaxseed and place into a bowl holding the 6 tbsp of water. Mix well and set aside
  5. Heat pan and sauté vegetables. Set aside allowing to cool.
  6. Grind walnuts and oats until a powdered form.
  7. Process the black beans as desired. Note (It can be processed until a smooth paste or chunky.)
  8. Add the walnut oat mixture and vegetables to the black bean in the processor. Blend well and transfer to a bowl.
  9. Oil hands, scoop out mixture and form into a patty. Note (We used 1 C measurement only because we had big buns. Feel free to use a ½ C or even ¼ for smaller burgers. )
  10. Place patties onto a greased baking tray lined with foil. Bake the patties on each side for 20 minutes. Note (The bigger the patties the more time it will need in the oven. A little softness in the centre is ok but make sure most of the patty is cooked. It should have a crunchy exterior.)
  11. Process the avocado with the garlic and stream the olive oil. Blend until a smooth paste has been formed. Add salt and black pepper to taste.
  12. Assemble the burger and add any other additional toppings you may like.
  13. Enjoy!

    How much black beans = 3 cans of black beans. I’m planning on using dried, uncooked beans😊
