Make sure steak is at room temperature and patted dry
Drizzle steak with a teaspoon of vegetable oil then apply dry rub to both sides
In a hot pan or skillet cook 1" steaks for 1 minute on either side. If steaks are thicker than 1" cook for 2 - 3 minutes on one side then cook for 1 minute on the other side
Remove from pan then allow to rest for 5 - 8 minutes
Stew Sauce Method
Add brown sugar to pan then caramelize until dark brown in color
Add onion, garlic and mushrooms then sauté for 2 minutes. Season with salt & black pepper to taste
Add roucou, coconut milk, bay leaf & thyme then cook for 5 minutes or until thickened
