Ingredients

channa/chickpea flour

tbsp
berbere spice
3
medium sized onions
diced
3
cloves
garlic
minced

cups
tomato
diced
1
scotch bonnet pepper
diced

vegetable oil

hot water
salt & black pepper
to taste
Instructions
Use a whisk to combine chickpea flour and berbere spice.
Add oil to a pot then add onions.
Sauté for 3 minutes.
Add garlic, pepper and tomatoes. Season with salt and black pepper then sauté for 4 minutes.
Add water then whisk in chickpea flour mixture gradually.
Combine until smooth then cover and allow to simmer on low heat for 30 minutes.
Add additional water if mixture is too thick.
Season with additional salt to taste if necessary.
Serve & enjoy.
