Ingredients

  • 1 ½ cups channa/chickpea flour
  • 2 tbsp berbere spice
  • 3 medium sized onions diced
  • 3 cloves garlic minced
  • 2 cups tomato diced
  • 1 scotch bonnet pepper diced
  • 4 tbsp vegetable oil
  • 3 - 4 cups hot water
  • salt & black pepper to taste

Instructions

  • Use a whisk to combine chickpea flour and berbere spice.
  • Add oil to a pot then add onions.
  • Sauté for 3 minutes.
  • Add garlic, pepper and tomatoes. Season with salt and black pepper then sauté for 4 minutes.
  • Add water then whisk in chickpea flour mixture gradually.
  • Combine until smooth then cover and allow to simmer on low heat for 30 minutes.
  • Add additional water if mixture is too thick.
  • Season with additional salt to taste if necessary.
  • Serve & enjoy.
