Fluffy Pancakes

Ingredients

of granulated sugar

salt

baking powder

dash of vanilla extract

melted butter
Instructions
In a large bowl, combine the flour, sugar, salt and baking powder. In a separate bowl or jug, combine the milk, vanilla, egg yolks and butter.
Place the egg whites in a clean bowl and whisk until they are frothy and begin to hold their shape.
Make a well in the middle of the dry ingredients and pour in the wet ingredients. Mix until combine.
Gently fold the whipped egg whites into the batter.
Place a medium frying pan over low heat and spray with non-stick spray.
Add pancake batter to the pan in ¼ cup measurements. Wait until there are bubble throughout the top of the pancake before flipping.
Serve warm with maple syrup.
