My bredren Kevin dropped off some breadfruit for me the other day and I was thinking of ways prepare it. Didn’t want to do the same old breadfruit chips and I already have a curry breadfruit recipe on the channel so I decided to do a breadfruit & peas stew, one pot something. I didn’t go out to shop to put this dish together so I’m just using stuff I have in the kitchen.
Instead of taking the approach of just throwing everything into the pot and allowing it to cook together, which would result in a mushy breadfruit dish similar to oil down, I decided to fry the breadfruit separately then toss it in the stew at the end for some difference in textures in the dish.
Breadfruit & Peas Stew Ingredients
- 1 breadfruit cut into bite sized chunks
- 1 can pigeon peas
- 1 onion diced
- 5 cloves of garlic minced
- 4 pimentos finely chopped
- 1 habanero pepper finely chopped
- 3 celery stalks finely chopped
- 1 carrot diced
- 3 tomatoes diced
- 3 bay leaves
- 8 all spice berries crushed
- 2 tbsp dried thyme
- 2 tbsp roucou
- 1 1/2 cups coconut milk
- 1/4 cup olive oil
- salt and black pepper to taste
Method
- Add oil to pot then fry breadfruit chunks until golden brown, season with salt and black pepper
- Remove breadfruit from pot and set aside
- Saute aromatics – onion, garlic, pimento, habanero, celery, carrot, season with salt and black pepper then saute for 2 minutes
- Add tomatoes, bay leaves, all spice dried thyme, pigeon peas and roucou then saute for another 3 minutes
- Add coconut milk, cover then allow to simmer for 7 minutes
- Toss fried breadfruit with mixture or plate separately
- Enjoy
