Caribbean Chai

There’s something very comforting about brewing your own tea from scratch. You experience a sense of accomplishment, you are rewarded with delicious tea and you have the pleasure of filling your kitchen with lovely, soothing aromas. Truth be told, the spices used in this chai spice blend are the same ones you would find in a typical chai. The difference however is the addition of Bae (Bay) Leaves. The beauty in this is recipe is that you can experiment with the different amounts of each spice and tweak to your liking.


Caribbean Chai DIY

Ingredients

  • 1 thumb sized piece of ginger sliced (skin on)
  • 1″ piece of whole cinnamon
  • 1/4 nutmeg
  • 12 grains of clove
  • 6 cardamom pods
  • 2 bay leaves
  • 4 cups of water

Method – Percolator

  1. Toast ginger along with spices in a pan until they become fragrant
  2. Add toasted spices with bay leaves into percolator pot with hot water
  3. Allow to steep for 10 minutes before drinking
  4. Enjoy

Method – Stove Top

  1. Toast ginger along with spices in a pan until they become fragrant
  2. Add toasted spices with bay leaves into a pot with water
  3. Bring to a rolling boil then turn off and allow to steep for at least 5 minutes
  4. Enjoy
