Zesty Lemon Loaf
This is a delicious diversion off the beaten path of baked items traditionally prepared for the holidays. Zesty citrus flavor permeates the loaf with the addition of lemon zest, lemon juice and Angostura Orange Bitters.

Ingredients

cake flour

substitute with 1 tsp vanilla extract

milk

vegetable oil

lemon juice

Instructions
Warm milk in microwave for 30 seconds.
Dissolve sugar in milk.
Add lemon juice to milk mixture then set aside.
Combine flour, baking powder, salt, lemon zest and tonkabean.
Add milk milk mixture to dry ingredients.
Add eggs and oil then add a few liberal dashes of Angostura Orange Bitters.
Combine mixture with a whisk making sure not to over-mix.
Transfer batter to a greased loaf pan then place in a preheated oven at 350 degrees for 45 minutes.
Allow loaf to cool for 15 minutes in the loaf pan before transferring to a wire rack.
Allow to cool for at least another additional 15 to 20 minutes before drizzling with lemon frosting.
Finish with poppy seeds (optional)

Lemon Frosting
Add icing sugar to a bowl with salt and lemon juice.
Add 2 to 3 dashes of Angostura Orange Bitters
Use a whisk then combine.
