Sweetbread - The Almost Perfect Recipe

- 3 cups all purpose flour
- 3 tbsp baking powder
- 1 tsp salt
- 1 cup brown sugar
- 1 cup freshly grated coconut
- 2 tsp tonkabean
- 1 cup raisins hydrated
- 3 Oz butter at room temperature
- 1 egg beaten
- 1 ¼ cup coconut milk
- ½ tsp coconut essence
Combine dry ingredients in a large bowl.
Combine wet ingredients in a bowl.
Add butter to dry ingredients then add wet mixture.
Combine well.
Add sweetbread batter to a well greased loaf pan
Top with freshly grated coconut and a sprinkling of sugar
Bake in a preheated oven at 300 degrees for 90 mins
Loosen sides with a butter knife then allow to cool for at least 10 minutes
