Sweetbread - The Almost Perfect Recipe

Ingredients

  • 3 cups all purpose flour
  • 3 tbsp baking powder
  • 1 tsp salt
  • 1 cup brown sugar
  • 1 cup freshly grated coconut
  • 2 tsp tonkabean
  • 1 cup raisins hydrated
  • 3 Oz butter at room temperature
  • 1 egg beaten
  • 1 ¼ cup coconut milk
  • ½ tsp coconut essence

Instructions

  • Combine dry ingredients in a large bowl.
  • Combine wet ingredients in a bowl.
  • Add butter to dry ingredients then add wet mixture.
  • Combine well.
  • Add sweetbread batter to a well greased loaf pan
  • Top with freshly grated coconut and a sprinkling of sugar
  • Bake in a preheated oven at 300 degrees for 90 mins
  • Loosen sides with a butter knife then allow to cool for at least 10 minutes
  • Serve & Enjoy
