Sweet Potato Spanish Omelette

Ingredients

  • 1 Sweet Potato sliced thinly
  • 1 Medium sized Onion sliced
  • 1 Clove of Garlic
  • 4 Eggs
  • 4 Tbsp Olive Oil
  • 1 Pinch of Whole Geera or Cumin
  • 2 Tbsp Butter
  • Salt & Black Pepper To taste

Instructions

  • I Had to get the most out of this one clove of garlic so instead of chopping or mincing, use a bit of salt, the flat edge of your knife and turn it into a garlic paste. You will be able to extract the most flavor out of the garlic using this method.
  • To a frying pan add about 4 tablespoons of olive oil
  • Toast a sprinkling of whole geera in the oil
  • Add your sweet potatoes and cook until tender
  • As sweet potatoes begin to go tender, add onion and garlic. Cook on low heat until onions are caramelized
  • Add 4 eggs to a bowl
  • Add sweet potato mixture
  • Season with salt and pepper and allow to sit for at least 5 minutes
  • Add 2 tablespoons of butter to your frying pan
  • Add the egg mixture to the pan and cook for about 3 to 5 minutes or until the edges start to go brown and bubble.
  • Use a plate and cover the frying pan, flip the omelette in onto the plate then slide it back into the frying pan for the other side to cook for about 2 -3 minutes.
  • Serve and enjoy!
