Stewed Minced Beef

Ingredients

  • 2 tbsp of paprika
  • 1 tsp cayenne pepper or chilli powder
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp brown sugar
  • 2 tbsp roucou
  • 2 bay leaves
  • A couple sprigs of thyme
  • 1 medium sized onion chopped
  • 3 cloves of garlic minced
  • 3 tomatoes diced
  • 1 lb lean minced beef

Instructions

  • Seeing that we’re using lean minced beef I jumped straight into caramelizing the sugar for our stew.
  • Add your beef when the sugar gets to the browning stage and allow it cook for 1 minute to gain some colour.
  • Then add your aromatics and herbs, season with your spices then cover and allow to simmer on medium heat for 10 minutes.
  • Don’t add any additional water to the pot at this stage. Let the steam process do its thing to add moisture and that sauciness that Trinis love in their food.
  • After about 10 minutes on medium heat, your stewed minced beef is done.

Notes

I used lean minced beef rather than the regular because it takes less time to cook. When I cook regular minced beef I don’t use any additional oil. And I like to cook it for an extended period of time to allow some of the fat to render and infuse more flavour to the dish.
