Sponge Cake

Sponge cake is a big part of Christmas tradition for many Trinbagonian families. The holiday season is a time where having freshly baked items in the kitchen with those lovely aromas wafting through the house is a must. This is my Granny's recipe for a simple Sponge Cake.

Ingredients

  • 2 cups granulated sugar
  • 1 cup butter
  • 4 eggs
  • 2 tsp. vanilla essence
  • ½ lime zest
  • 1 tbsp. lemon juice
  • 1 cup cuisine evaporated milk
  • 3 cups cuisine purpose flour
  • ½ tsp. baking soda
  • ½ tsp. baking powder
  • 1 tsp.cinnamon
  • 1 tsp. nutmeg
  • ½ tsp. salt

Instructions

  • Grease and flour a 9" cake pan.
  • Sift together the flour, baking powder, baking soda,cinnamon ,nutmeg and salt.
  • Cream sugar and butter until smooth. Note:(This process takes a while around 25 minutes or more depending on what kind of mixer you use.Make sure to cream until light and smooth as it helps with the texture of the cake.)
  • Beat the eggs adding them one at a time.
  • Mix the lime juice and milk.
  • Add a 1/3 of the creamed mixture and 1/3 of the milk mixture to the flour. Continue adding gradually until everything is well combined. Note: ( keep on a low speed)
  • Beat in the vanilla essence and zest lime. Note: (make sure to get all the sides and at the bottom of the bowl)
  • Pour into greased pan and bake in a 350 degrees Fahrenheit.
  • Test with a knife or skewer by inserting in the center of the cake, when it comes out clean the cake is done.
  • Allow to cool for 10 minutes and remove from pan.
  • Serve and enjoy
