Spaghetti Muffins

Ingredients
1
pack Knorr Alfredo Sauce Mix
400
g
Spaghetti
1
medium sized onion
finely diced
4
cloves
of garlic
minced
4
pimentos
minced
1
sweet pepper
diced
1 ¾
cups
of milk
2
eggs
2
tbsp
butter
6
cups
of water
1
tbsp
oil
1
tbsp
dried thyme
4
cups
grated cheese
Salt & black pepper
to taste
Instructions
Add water to a large pot and bring to a rolling boil.
Season with a pinch of salt and cook pasta until tender (approx. 10 minutes)
Brown butter in a sauce pan
Add milk and Knorr Alfredo Sauce Mix, bring to a boil while continuously stirring
Reduce heat and simmer for two minutes until the sauce has thickened
Add oil to a pot then saute onions for 1 minute
Add garlic and pimento, saute for 1 minute
Add sweet peppers, season with salt, black pepper and dried thyme, saute for one minute
Add Knorr Alfredo Mix and combine with aromatics
Add spaghetti and 3 cups of grated cheese and eggs then combine
Remove from heat and fill your greased muffin tray
Top with grated cheese
Bake in a preheated oven at 350 degrees for 10 minutes or until golden brown
Allow to cool then enjoy!

Bonus: Cast Iron Skillet Pies
Add pasta mixture to a greased cast iron skillet
Top with cheese and/or bread crumbs
Cook on stove top over medium heat for 8 to 10 minutes or until the sides start bubbling
Transfer skillet to a preheated oven at 375 degrees and cook under broiler for 5 minutes or until golden brown
Allow to cool and enjoy!
