Drain the liquid from the cans and set it aside. Note (Be sure to save the liquid as you may need it later on in the process.)
Chop pineapple into smaller pieces. Note (The smaller the pieces the quicker it will be broken down.)
Place pineapple into a pot that is on medium –low heat. Add sugar, spices and lime juice. Mix well and allow the jam to form for an hour. Note (Keep on a medium -low heat if the mixture starts to stick lower the flame and add a little of the left-over liquid.)
Once mixture has reached an amber colour and has a concentrated sticky feel to it allow to cool and enjoy!
