Ocean Spray Festive Rice Pilaf

- 1 cup Ocean Spray Craisins
- 2 cups leftover/cooked Ham or Turkey chopped
- 3 cups parboiled rice
- 1 carrot diced
- 1 onion finely chopped
- 5 cloves garlic minced
- 1 ” piece ginger minced
- 1 scotch bonnet pepper optional
- ¾ cup whole kernel corn
- 1 sweet pepper diced
- 3 celery stalks finely chopped
- 4 sprigs thyme
- 1 tsp all spice/pimento berries crushed
- 1 cinnamon stick
- 4 cardamom pods
- 2 bay leaves
- 3 cups water or chicken stock
- Oil for sautéing
- Salt & black pepper to taste
Add oil to a pot on medium/high heat
Add onions then sauté for 1 minute or until translucent
Add ginger, garlic, carrot, celery and all spice. Season with salt and black pepper then sauté for 2 minutes
Add rice, cinnamon, cardamom and bay leaves then allow rice to cook for 3 minutes
Add corn, sweet pepper, ham/turkey and Ocean Spray Craisins to the pot
Add water/chicken stock, two sprigs of thyme and scotch bonnet pepper then season with salt to taste
Cover pot then allow to cook for 12 minutes on low heat
Turn off heat then allow the rice to continue to steam for another 5 minutes
Add remaining thyme to the rice to finish
