Ocean Spray Festive Rice Pilaf

Ingredients

  • 1 cup Ocean Spray Craisins
  • 2 cups leftover/cooked Ham or Turkey chopped
  • 3 cups parboiled rice
  • 1 carrot diced
  • 1 onion finely chopped
  • 5 cloves garlic minced
  • 1 ” piece ginger minced
  • 1 scotch bonnet pepper optional
  • ¾ cup whole kernel corn
  • 1 sweet pepper diced
  • 3 celery stalks finely chopped
  • 4 sprigs thyme
  • 1 tsp all spice/pimento berries crushed
  • 1 cinnamon stick
  • 4 cardamom pods
  • 2 bay leaves
  • 3 cups water or chicken stock
  • Oil for sautéing
  • Salt & black pepper to taste

Instructions

  • Add oil to a pot on medium/high heat
  • Add onions then sauté for 1 minute or until translucent
  • Add ginger, garlic, carrot, celery and all spice. Season with salt and black pepper then sauté for 2 minutes
  • Add rice, cinnamon, cardamom and bay leaves then allow rice to cook for 3 minutes
  • Add corn, sweet pepper, ham/turkey and Ocean Spray Craisins to the pot
  • Add water/chicken stock, two sprigs of thyme and scotch bonnet pepper then season with salt to taste
  • Cover pot then allow to cook for 12 minutes on low heat
  • Turn off heat then allow the rice to continue to steam for another 5 minutes
  • Add remaining thyme to the rice to finish
  • Serve & Enjoy
