Homemade Granola

This recipe uses warm, comforting spices like cinnamon, nutmeg, tonkabean and bayleaf powder. Fresh ginger and slivers of dried coconut add some added flavor, texture and of course, nutritional value!

Ingredients

  • 4 cups old fashioned oats
  • cups honey
  • cups coconut oil
  • ¼ cup chopped ginger
  • 1 cup dried coconut slivers
  • 1 cup raw peanuts
  • 1 cup raw almonds
  • 1 cup pumpkin seeds
  • 1 cup golden sultanas
  • 1 tsp cinnamon powder
  • ½ tsp grated nutmeg
  • 1 tsp grated tonkabean
  • 1 light pinch bay leaf powder
  • sea salt to taste

Instructions

  • Add dry ingredients (except sultanas) to a large bowl then combine well.
  • Add coconut oil to mixture then combine well.
  • Add honey then combine well.
  • Place mixture onto a baking tray lined with parchment paper then bake in a preheated oven at 350 degrees for 10 minutes.
  • Remove tray from oven then add sultanas to the mixture. Toss then return to the oven and bake for an additional 10 minutes.
  • Remove granola in the parchment paper from baking tray then place on a cooling rack.
  • Allow it to cool to room temperature before enjoying.
  • Store in an airtight container.
