Flourless Chocolate Cake

Ingredients

  • 8 ounces of chopped semi-sweet chocolate or semi-sweet chocolate chips
  • 4 ounces of melted butter
  • ¾ cup of granulated sugar
  • 3 eggs at room temperature
  • ½ cup of cocoa powder sifted
  • Icing sugar optional garnish
  • Vanilla ice cream optional serving suggestion

Instructions

  • Place chopped chocolate or chocolate chips in a large heatproof (glass or metal) bowl, set over a saucepan of simmering water. Gently melt, stirring to dissolve the solid pieces.
  • Once all chocolate has melted, remove bowl from heat and stir in melted butter.
  • Whisk in sugar and eggs.
  • Stir in sifted cocoa powder.
  • Transfer batter into well-greased ramekins or cake pan lined with foil and sprayed with non-stick spray.
  • Place in oven at 375F for 25 minutes.
  • Garnish with icing sugar and serve warm with vanilla ice cream.
