Instructions
Place garlic, ginger, pimento, scotch bonnet pepper and herbs into a food processor then blend into green seasoning.
Add the juice of one lime and salt to taste to the green seasoning mixture.
Rub fish pieces with green seasoning and allow to marinate for at least 1 hour.
Add oil and butter to a pot then add fish head and/or tail.
Add onions then sauté until translucent.
Add tomatoes, pumpkin and remaining green seasoning to the pot then cover and allow to simmer for 12 minutes.
Add ochro, carrots, potato and dasheen then add water. Bring to a boil on high heat then reduce to medium heat.
Cover and simmer for 15 minutes or until veggies and provisions are cooked.
Add pieces of fish along with green seasoning to the pot then allow to cook for 4-5 minutes
Add additional lime juice and salt to taste
