Breadfruit Fritters
These breadfruit fritters are a great way to salvage that overripe breadfruit and turn it into a wonderful snack!

- 3 cups breadfruit pulp
- 2 large eggs
- 1 medium onion finely chopped
- 3 cloves garlic finely chopped
- 2 pimento peppers finely chopped
- ½ scotch bonnet pepper finely chopped
- 3 shadon beni leaves finely chopped
- salt & black pepper to taste
- 4 tbsp oil for frying
Saute onion, garlic, pimento and scotch bonnet pepper in a frying pan for 1 minute or until onions are translucent.
Add aromatics, shadon beni, breadfruit and eggs to a bowl then combine well.
Season with salt and pepper to taste.
Add oil to a frying pan then, using a spoon, portion out batter into fritters and place two to three into the pan.
Cook on low heat for 3 to 4 minutes per side
