15 Minute Veggie Soup
This is the prefect dish to throw together using basic ingredients. Enjoy a wholesome veggie soup in 15 minutes or less or your money back!

- 1 carrot diced
- 1 potato cut into small cubes
- 1 medium sized onion diced
- 2 cloves of garlic minced
- 2 pimentos finely chopped
- 1 celery stalk finely chopped
- 3 tbsp olive oil
- 1 ½ cups water hot water
- salt and black pepper to taste
Add oil to a pot on medium heat
Add onion, garlic, carrot, potato, pimentos and celery, saute for 3 minutes
Season with salt and black pepper to taste
Add water and bring to a rolling boil
Simmer for 8 to 10 minutes
Finish with fresh celery
Serve hot
