15 Minute Veggie Soup

Ingredients

  • 1 carrot diced
  • 1 potato cut into small cubes
  • 1 medium sized onion diced
  • 2 cloves of garlic minced
  • 2 pimentos finely chopped
  • 1 celery stalk finely chopped
  • 3 tbsp olive oil
  • 1 ½ cups water hot water
  • salt and black pepper to taste

Instructions

  • Add oil to a pot on medium heat
  • Add onion, garlic, carrot, potato, pimentos and celery, saute for 3 minutes
  • Season with salt and black pepper to taste
  • Add water and bring to a rolling boil
  • Simmer for 8 to 10 minutes
  • Finish with fresh celery
  • Serve hot
  • Enjoy
